Eggplant Pie

Love makes you do crazy things. I ended up making a PIE. A pie without a baking dish, no frozen crust, and no unsalted butter. You heard me right.

Hubby loves all kinds of savory tarts and pies. So to make him feel good after work, I decided to make a pie… Okay, this might not be an exact pie but very close to it .

Anyway…I figured out that if I had to make the pie crust, I would be slaving away in the kitchen for a good part of the day. So I didn’t follow the exact pie making procedure but some short cuts. The results…not incredibly fancy looking but pretty good as per my standards and hubby loved eating it. What else do I need???

The recipe includes step by step pictures.





Ingredients for making two pies

Eggplants (Brinjal) ½
Eggs 2
All purpose flour (Maida) 1 cup
Oil 2-3 tablespoon
Cheddar cheese
Tomato ketchup 1-2 teaspoon
Red chilli powder 5 teaspoon
Salt to taste

Directions

Dough

In a wide open bowl, mix flour, oil (1 tablespoon), one egg, and salt. Use your fingers to blend it well without any lumps. Cover the dough in a wet cloth and give it rest for 15 mins.






Meanwhile...

cut eggplant into thin slices. Wash the slices and pat dry with a kitchen towel.



Sauté the slices in some oil and sprinkle some red chilli powder and salt. Sauté until eggplant is slightly browned and tender, about 5 minutes.





Get back to the dough. Divide it into four equal portions (2 layers for each pie)
Roll out dough into thin layers (One for the base and one for covering the pie.)



Assembling

Grease the baking tray. Spread the dough layer. Arrange four to five slices of cooked eggplant. Put some cheese on top of it. Throw some ketchup.



Lay more layer of eggplant slices.



Cover the pie with dough layer. Pinch the corners to seal the pie.



Coat the pie with some egg white.



Bake it in an oven at 200ºC for seven to eight minutes.Oops I can see my reflection.



Flip and check, both the sides should be golden brown. Serve it with a scoop of joy.

I seriously envy that huge oven of urs! In India that's a rarity. Ur eggplant pie with a step by step procedure looks great. Would be great for a meal.

MD, you can make this in a microwave with grill option or even on tava.
